Tiny Spicy Chicken

Tiny Spicy Chicken

3 lbs cubed uncooked chicken
garlic salt
2 eggs
1/2 - 1 cup cornstarch
Put cubed chicken in a ziploc bag and sprinkle quite liberally, with garlic salt. If you like more garlic and salt flavor more so than if you don't. Let it sit for 1 hour, then add the eggs and squish it to coat all pieces. Add the cornstarch and make sure each piece is covered.

Sauce:
1/4 cup cornstarch
6 tbsp brown sgar
1 1/2 cups sugar
1 1/2 cups chicken broth
3/4 cup vinegar
3/4 cup ketchup
3 tbsp soy sauce
1 - 2 tbsp Sambal Oelek fresh chili paste (a little goes a long way, so start with less. You can always add more)

Heat 1 tbsp of oil in a skillet and brown chicken, then cover with sauce and cook at 350 for 45 minutes to 1 hour, turning the chicken every 15 minutes to be sure it stays covered. Serve over rice.
